Just read the summary on Sushi and need to add some vital info to the
mix. (apologies for missing the original post. I would have responded
then)
There is a growing, and alarming trend for restaurants to add wheat
gluten to their sushi rice. Teppan Edo at Epcot does this and it was
the first time I came across it. Since last September we've
discovered 2 sushi restaurants in the greater VA Beach area that do
this and one in Bethesda, MD.
Celiacs should be aware that the sushi rice in Japanese restaurants is
now a possible source of gluten
