Hi All!

Ok - this was my second Thanksgiving GF.  I made stuffing last year and it 
was so - so (I thought - ok not bad for a first attempt).  I thought I had an 
idea to improve it - but it was not worth the effort this year.  I baked 3 
loaves of Bob's Red Mills bread - 2 regular and 1 hearty (brown bread).  The 
brown bread was probably my first mistake (with all the sunflower seeds in 
it!).  Then I cut up the loaves and dried the cubes in the oven for 
Thanksgiving day.  I made stuffing like I normally do (with fried onion, 
mushrooms, chicken broth, butter, bread cubes but I added 6 beaten eggs 
(this seemed to improve the stuffing left overs last year).  But I have to say , 
it was a lot of work and the taste was quite disappointing.  

So, I wanted to ask you all (and PLEASE BE HONEST) - did any of you have 
real success with your stuffing?  I don't consider success to be "it didn't taste 
that bad".  I'm thinking to skip the stuffing all together next year because 
after all that work and expense it was quite honestly - awful.  The bread 
cubes didn't soak up the moisture all that well and the taste was dry and like 
stale rice (if there is such a thing).

If anyone had excellent GF stuffing - I'd love the recipe or tips!
