Hi all,

I just shared this recipe directly with someone seeking
breakfast ideas, but thought I'd go ahead and share it with
everyone in case you were looking for another last-minute
idea for an easy breakfast recipe. This is a mainstream
recipe I found online several years ago. I always make it
when we have overnight guests. It's enjoyed by all and easy
to make. You can even make it the night before and just put
it in the oven in the morning.

Denver Oven Omelet

Ingredients

8 eggs 
1/2 cup half-and-half 
1 cup shredded cheddar cheese 
1 cup finely chopped cooked ham 
1/4 cup minced green pepper 
1/4 cup minced onion 
1/4 teaspoon parsley (optional) 

Directions

Beat eggs and half and half until light and fluffy. 

Stir in the cheese, ham, green pepper, onion and parsley. 

Pour into a greased 9-in square baking dish. 

Bake at 400 degrees for 25 minutes or until set.
