While I disagree with her comments in the LA Times and suspect that 
Suzy Badaracco, president of
Culinary Tides, is primarily skilled at making statements that get 
her name in the paper, according to her Web site she is also a 
registered dietitian, chef, and has  a master's in human nutrition. 
Assuming that's all true, she does have some knowledge in the field.
