Many, many thanks to all for have answered so quickly - Far more than I expected or could even thank individually. Please send no more - my mailbox is full! Most are the quick-start information guides for newbies.
In summary, the majority suggested - GIG website, gluten.net, celiac.com for publications that you can download.
Also Living Without magazine, National Association for Celiac Awareness (which has information packets for institutions for a small fee), and Shelley Case - as posted above.
