New Years Potatoes
These are creamy and flavorful with out all the calories in a cream sauce.
7 thin skinned potatoes, peeled and
thinly sliced (I use a mandolin)
3/4 cup thinly sliced and quartered onion
3 tablespoons butter
1/4 cup gluten-free rice flour
1 3/4 cups chicken broth
2 tablespoons real mayonnaise
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 - 1 cup grated cheddar cheese for garnish
Preheat oven to 325
Grease a 2 1/2 quart baking dish. Layer potatoes and onions.
For the sauce melt butter in a heavy sauce pan. Stir in flour until smooth. Slowly add broth and mayonnaise, salt and pepper. Cook, stirring constantly until thick and bubbly, about 2 minutes. Pour over potatoes.
When potatoes are soft, remove from the oven and sprinkle with cheese. Return to the oven for a few minutes until cheese is melted.
