Antonio Express News Food column today.  Pam's Patio is the first GFRAP
local restaurant in San Antonio.  If you are coming for a visit, or live in
the city, it is good to know that all of their recipes are made from
scratch, like this one, and there are no hidden ingredients in their food.

strawberry lemonade? We'd like to use it for a graduation party.

Dear R.H.: David and Pam Strain, owners and chefs at Pam's Patio Kitchen,
have the right idea. They make real food — the sort our grandmothers would
recognize. 

That firm philosophy carries over even to the lemonade. It's not a mix with
unpronounceable ingredients printed in tiny letters on a box. It's made with
— gasp — lemons, sugar, water and strawberries! It couldn't be simpler, and
that's its charm.

The pretty pink comes from the color of the sliced strawberries, gradually
infusing the lemonade. David rightly stresses the importance of squeezing
fresh lemons, not resorting to the bottled juice. Prepare it at least an
hour or so before serving and refrigerate to chill it thoroughly. And tell
the graduate congratulations! 

The Strains are adventurous cooks, and their eclectic menu reflects their
love of good foods from around the world. Dishes from Mexico, Italy, Asia
and, yes, America, all live in harmony, so when the family can't decide
where to eat, Pam's Patio is the obvious answer. 

Note their schedule: lunch Tuesday through Saturday, and dinner on Thursday,
Friday and Saturday evenings. Pam's Patio also offers wine dinners, so when
you come by, be sure to inquire about those as well.

Pam's Patio Kitchen's Strawberry Lemonade

San Antonio Express-News 

2 2/3 cups fresh lemon juice (from 15-18 lemons) 
4 2/3 cups sugar
Water (about 18 cups), enough to make 1½ gallons 

1 pint strawberries, stemmed and sliced 

Combine freshly squeezed lemon juice with sugar in a 1½ gallon container.
Stir well to dissolve sugar. Add cold water to make the 1½ gallons. Add
sliced strawberries and stir. Refrigerate. 

Note: To make a more manageable amount (1/2 gallon), use a scant 1 cup lemon
juice, 1½ cups sugar, about 6 cups water and, of course, fewer strawberries.
Refrigerate to chill. 

Makes 1 ½ gallons or 24 cups. Approximate nutritional values per cup: 100
calories (0.3 percent calories from fat), 0 protein, 31 g carbohydrate, 29 g
sugar, 0 dietary fiber, 0 fat, 0 cholesterol, 10 mg sodium.
