Unfortunately you can't grow out of celiac disease.  She might want to
see a gastroenterologist for another biopsy, since she has been on a
gluten containing diet for a while.  It could be that she never had it,
but some other type of disorder.  My grandfather died at 64 from an
intestinal lymphoma.  When my son was diagnosed with celiac, I told my
dad - who said "your grandfather had that, but he grew out of it."
