I tried a new pie crust yesterday. This is great with pumpkin pie filling.
Easy as Pie Pecan Pie Crust
3/4 cup pecan halves
3/4 cup gluten-free oats
3/4 cup Ruby Range Basic Mix
1/2 teaspoon cinnamon
pinch of salt
1/4 cup melted butter or applesauce
2 - 3 Tablespoon maple syrup
Preheat oven to 375
Toast pecan halves for 7 -10 minutes. Set aside whole halves for garnish.
Mix oats, flour, pecans, 1/2 teaspoon cinnamon, salt in a food processor. Pulse until mixture until it becomes a coarse meal.
Mix in melted butter and maple syrup until you get a soft dough. Press mixture into a pie plate. Crimp edges. Bake for 10 minutes.
