This is a recipe I developed almost thirty years ago....easy and great.
Use ANY nut butter..peanut, almond, macademia, cashew, sunflower.
The trick is to use a NON OILY butter..drain off the oil
preheat oven to 350
line a cookie sheet with silpat pad or parchment paper
combine
1 cup nui butter
1 cup sugar
1 egg, mixed
1 teas vanilla
combine well. using a small ice cream scoop, place on parchment peper or silpat. if made with dry nut butter, they will not spread.
bake at 350 for 12 to 15 min. DO NOT LET BROWN. let cool on rack for about 3 min then remove to cooling rack.
hints...
try addidng a cup of mini choc chips
try a half cup of chopped candied ginger
try a half cup of raisins
a fancy twist...take some choco frosting and making sandiwhch cookies
one cup of nut butter makes approx 36 cookies.
this recipe has been printed in many magazines...enjoy!
one more hint...when storing in a metal cookie jar {works best] separate each layer with either parchment paper or paper towels
