I have been researching and writing about celiac disease and the gluten-free diet for twelve years. During this time my work has focused on the controversial aspects of the diet including whether oats and wheat starch should be allowed as well as the nutritional quality of the diet. While much attention has been paid to what foods can and cannot be included in a gluten-free diet little attention has been paid to whether the diet is nutritious. In fact a gluten-free diet can be very healthful but certain nutrients might be lacking. In 2005 my colleagues and I conducted a study whose results indicated that many gluten-free diets lack necessary levels of fiber iron calcium and B vitamins. The Gluten-Free Nutrition Guide will show you how to make sure these vital nutrients make their way into your own diet.
