Did you know that prior to the arrival of the Europeans; there were no grains in the western Hemisphere that contained gluten? The great civilizations of the Americas depended on quinoa, amaranth. corn, beans and squash as staples in their diet. Quinoa and amaranth are two of the most nutritious grains grown. I have included quinoa, amaranth and corn in my mixes. They add to the flavor, improve the baking properties, and bring important nutrients to our mixes.
It has been a challenge to get people with celiac disease to go beyond the usual blend of rice flour and tapioca starch. Those who have used our products are thrilled that they did. The most common adjective the I hear is "awesome". Sylvan Border Farm was one of the first to place an emphasis on nutritious and organic grains. I am proud of my role in promoting a healthier diet for people with celiac disease. I see many opportunities for our blend of flours in the future.
