Julie,

per your question on what to substitute for sandwiches-- the dining
services at my college found me the absolute best GF bread I've ever eaten
(and I've followed this diet since I was 2).  It's made by this company
called "Food For Life" in Corona, CA and is called 100% Wheat Free Gluten
Free Rice Bread.  It is sold both sliced and unsliced.  It's super because
not only does it taste great, but it's the "right" size and shape so it's
looks normal and fits into a regular pop-up toaster with no problem.
