Not of Jewish background, I still share your love of latkes, and of good cooking oils.
A a Paleo diet student, I know we are all in this arena to attain a diet more similar
to our heritage diet (the diet of our ancestors for 20,000 years before us) in order
to attain better health.
Please be aware that all canola oils not certified Organic, are GMO, genetically
modified. There are serious health and environmental concerns with all GM crops!
Also, corn in the U.S. is another highly modified crop which would have serious
health concerns. 98% of the US crop is genetically modified.
I think that as co-inhabitants of this shrinking planet we need to pay attention to
the current Big Ag construct, because it affects the future of all food.

I, personally, to use almond flour and coconut flour in several frying or baking
applications, and love the switch. Healthful and delicious!
I'll be interested to see what other comments pop up in answer to your letter.
