Does anyone have a reasonably detailed nutrient breakdown of bone marrow?
The best I can find is on the USDA database for "Alaska Caribou" bone
marrow, raw. However it only has Iron, Phosphorus, Thiamin, Niacin and
Vitamin A. I'd like to also know the nutrient density for Calcium, Magnesium,
Potassium, Sodium, Zinc, Copper, Manganese, Selenium, Vitamin C, Riboflavin,
Vitamin B6, Folate, B12, Vitamin E and K, and fatty acids.
If there is data on the nutritional difference between hard and soft bone
marrow (e.g from femur and from distal end of tibia) that would be desirable
too.
