Re fermented fruit being seasonal only, does that not depend on whether 
much of our heritage was spent in the tropics? An M.D. in BC once told 
me that humans spent several hundred thousands of years in the "belly of 
Africa". Lots of fresh food, generally. Different seasons; different fruits?
