With the holidays in just a few days, here's a surefire recipe for those of you chocolate lovers out there. It's quick and easy, as well. Enjoy!
COCOA LOVERS COOKIE
3/4 cup GF flour mix
1 tsp. Xanthan gum
3/4 cup unsweetened pure cocoa powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 sticks (3/4 cup) unsalted butter, softened
1 cup sugar
2 large eggs
1 tsp. vanilla
Preheat oven to 350 degrees F.
Whisk together flour, xanthan gum, cocoa, baking soda, and salt in a medium bowl. Set aside.
In another bowl, beat together butter and sugar with an electric mixer until pale and fluffy.
Add eggs and vanilla and beat until combined.
Slowly add flour mixture and mix just until combined (I do this by hand with a rubber spatula)
Drop level tablespoons of dough about 2 inches apart onto ungreased baking sheets and bake in batches in the middle of your oven until puffed and set, about 10 to 12 minutes.
Transfer cookies to a rack to cool.
