I'm a great believer in "Serendipity"...
I was clicking channels last night & found the Martha Steward Show on
Lifestyle network. Actress/comic Susie Essman of HBO's "Curb Your Enthusiasm" was
helping Martha cook steamed fish & quinoa salad. Susie already knew what quinoa
was because she "eats gluten-free." When asked, she said she found out she
needed to avoid gluten about 4 years ago...Nothing more was said on gluten-free,
but the virtues of quinoa were extolled!

Celiac was also mentioned in a blurb on fibromyalgia in the USA Weekend
sectionin last Sunday's paper. The article offered recommendations including
"following dietary guidelines if you also have one of the often-overlapping
conditions, such as lactose intolerance, irritable bowel syndrome or celiac disease."

I also happened to catch a program on "Fun"/Rice Noodles on Martin Yan's
Chinatown on PBS...That was most interesting as the rice noodles are made from a
white rice and water gruel which is then steamed on large baking sheets. I'm
going to see if microwaving could be used instead of steaming. Once steamed,
noodles are used to make other things.
Martin Yan added wheat starch to the mix he used in his kitchen demo so there
appears to be some flexibility in the ingredients we need to watch for when
buying "fun" (Chinese for rice) noodles. (Wheat noodles are "mein.")
I couldn't find this program online so you'll have to watch for reruns...
