Well, I'm by no means a doctor, nor am I a Celiac. My wife is, though.
She finds that even if she gets the _smallest_ amount of gluten
(call it, say, a dusting of wheat flour in something) she can tell.
She gets digestive distress, dermatitis, and other classic celiac
symptoms.
So I'm not sure but that maybe _any_ gluten causes damage.
