I went to a short demo of VoiceOver at an Apple store over the summer.  It 
worked fine with the web browser.  It worked fine with Word.  It worked OK 
with the PDF viewer.  But it utterly failed with Excel, AppleWorks 
spreadsheet, and the commandline.  I would be very suspect that it would 
work with any Audio manipulation program.

You should definitely try out the software with it before you buy.

It does have a pretty decent tutorial but then again, I am used to 
computers.  Not sure how it would be for a new user.
