Calories - and the counting of such - is a tough question (with lots of differing opinions, and I maintain, no certain answers). Same regarding exercise. It's human nature, I think, for someone to think they have found "the" answer and then assume it applies to everyone else as well.
Personally, I'm beginning to believe individual genetics plays a much larger role in nutrition and fitness requirements than some would have you believe. Case in point - I follow a (roughly) 75% paleo diet, yet I do not suffer from some of the issues many others on this list complain about if they stray even 1% or 5% from their WOE. My bloodwork is excellent, my cholesterol/BP/pulse/etc.are those of someone much younger than I. Why? I inherited some great genes from my dad. Although he ate neolithically his entire life, smoked like a chimney, and generally treated his body like crap, he suffered no health issues until he was around 80 years of age.
I eat lots of salads (love the crunch), some berries and nuts, and a "medium" amount of cooked meat. It sounds to me like others on this list would do poorly on my food choices even though they fall within the paelo "umbrella".
I rarely eat breakfast (some say that's a no-no), sometimes no lunch - but I do seem to revel in the experience of denial.
Calories? Even when I eat completely "clean", I still have to watch my caloric intake. Some say calories don't count, others say different calories count differently. It doesn't seem to matter to me - I still need to watch them.
Same with exercise. Jim reports he does just fine on 3 days per week of HIT workouts. I've tried that in the past (in fact, at one point I was almost fanatical about it) and it just isn't enough for me.
I hate to say this, but - although asking questions and getting opinions is great, at some point in time you have to buckle down and find out what works *for you*.
