My friend Raven Kaldera is a neopagan writer and farmer who is very aware that his religion is a Neolithic/Iron Age farmers' religion.? He has written a long article about the seasonality of both the religious practices and the way of eating including a description of his practice of abstaining, at any given season, from foods that would have been unavailable to his premodern ancestors as a way of developing ancestral connections.? (It's at http://www.churchofasphodel.org/articles/feast_and_fast.html)?; Some of what's in there applies to the hunter-gatherer way of life as well and there's no reason a completely Paleo version couldn't be worked out.
