I would add that Bear Owsley also said some pretty inaccurate things 
about metabolism during his time at the lowcarb forum.  I would add that 
a fasting blood glucose level close to 100 is not, in my estimation, ideal.

Note that a diet that contains liver isn't zero carb.  Beef liver, for 
example, is about 1.1 g of carb per ounce.  Not a lot, but not zero.
