I just wanted to say a big THANK YOU to Jackie for posting her bread  
recipe. My 14 year old celiac daughter says it's the best bread she's  
had in 13 years. :) I could not believe how fluffy the bread was, nor  
how tasty! We've come a long way from grainy, crumbly rice bread.

I did make a couple of substitutions to the original recipe and wanted  
to share them with the list.

Where Jackie combined 4 fibers (ground flaxseed, Montina/rice flour  
blend, rice bran, Psyllium fiber) in equal amounts to make 1 cup, I  
used ground flaxseed, brown rice flour, and psyllium fiber, about 1/3  
cup each.

Because my daughter can have them, I used 2 eggs, instead of the agar  
agar in water. Next time I think I will try 2 eggs + 1 egg white.

I also used regular whole milk instead of the milk substitute called  
for in the original recipe.
