Hi, I wrote that you can substitute gf flour 1:1 and follow the tollhouse cookie recipe on the package of chocolate chips and I have had several questions sent to me asking about which flour I use.
I use Beth Hillson's Gluten Free Pantry Flour mix. I don't know if it has xantham gum in it, but we use it as is (no extra egg or anything) and the cookies come out amazing! Even my daughter's friends can't tell the difference.
I have no interest in the GF Pantry company but like their products. I hope this answers all of the questions people sent. Happy cookie baking!
