I adapted this recipe from the Land O Lakes web site. It bakes up into a nice cracker.
Flax Seed Cracker Bread
This bread recipe makes a thin, low-fat crisp cracker-like bread that you break into pieces to eat.
1 1 /2 cups Ruby Range Basic Mix
2 Tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/ 2 teaspoon salt
1/ 4 cup butter, softened
1/ 2 cup buttermilk
3 Tablespoon flax seeds
Preheat oven to 375
Combine flour, sugar, baking powder, baking soda and salt in a large bowl. Cut in butter so it looks like coarse crumbs. Add butter milk. Stir unit just moistened. Stir in flax seeds.
On a floured surface, knead dough a few times until smooth. Divide dough in half. On a greased cookie sheet roll out each half into a 13 x 11 inch rectangle. Prick with a fork.
Bake for 12 to 15 minutes or brown. Cool. Break into pieces.
