We make Buckwheat Waffles every Saturday morning. My own recipe, but it'snothing complex or special: 

BUCKWHEAT WAFFLE MIX 

5 C. Buckwheat
4 tsp. Salt
1/2 C. Sugar 
1/4 C. Baking Powder 

BUCKWHEAT WAFFLES(Makes double batch) 
1-1/2 C. B.W. Mix (above) 
2 Eggs
1 C. Milk 
1/3 C. Cooking Oil
1 C. Buttermilk 
1/4 tsp Vanilla 

Measure and pour the wet ingredients into a bowl with the mix. Mix ittogether with a wire whisk until it is evenly wet but still lumpy. Thismakes about 12 waffles (3 squares of 4) for us. We make extra and freezethem for toasting through the week. 

BUCKWHEAT BUTTERMILK PANCAKES 

1-1/2 C. W.W. Mix (above) 
2 Eggs
2 C. Buttermilk 
1 Tb. Cooking Oil 

Measure and pour the wet ingredients into a bowl with the mix. Mix ittogether with a wire whisk until it is evenly wet but still lumpy. Use asmall ladle to measure out pancakes. For crispy pancakes, use more cookingoil in the pan.  RalphDallas, TX

Use Pamela's Pancake Mix and follow the recipe for the waffles on back. It makes the best waffles in the world and IMHO they are as good as any home made waffle using wheat flour. Mary in Kansas

i make a really great waffle using Pamela's Baking & Pancake Mix. But I just read the ingredient list and it has tapioca starch. I wanted to give you one hint though from the package directions, so when you find a mix to use, this might help. My recipe calls for 2 eggs. Put the yolks into the bowl with the other ingredients and stir to mix. Then whip the whites until stiff and fold into the batter. This makes the waffles very light and fluffy, and mine also come out crispy on the outside. I also add blueberries and finely chopped pecans and sometimes a bit of coconut. But the secret is to whip the egg whites separately. My husband's grandmother taught me to do this to get perfectly light and fluffy latkes!Have fun!!!
