Hi Richard,
I've had both cable and satellite boxes over the years.  You can just enter 
the channel numbers and the box will go to that channel.  If you want to go 
in to the cable box menus, you will have to remember key sequences.  Program 
listings are not available through audio, they only show up on the 
television screen.
When it comes to dvd players, there is usually a play next button or a play 
all button, but it all depends on how the dvd was constructed.  Some go back 
to the initial screen and you have to arrow to each episode and those can be 
tuff.  I play those on my computer where I can read the titles with power 
dvd.

What aspects of the current converter boxes are inaccessible?  Do you have
to use the box to change channels? If so, does this at some point get you
into on screen menus?
