Anything you would do to lamb will work. Some of it may be a bit
tougher. Me, of course, I wouldn't cook it much, if at all. Some nice
seasonings would help, raw or cooked: oregano, garlic, rosemary,
thyme, marinade of red wine or even lemon juice with olive oil...
