I mainly attend a Catholic church, however I have taken the host at other
Christian services, and here's what I do when it comes time to take
communion.
 
I walk up to the altar, or kneel at the altar along with everyone else, and
when the priest reaches me just before he reaches for the host to be given
to me, I quickly say "A blessing father, I'm allergic".  At this point the
priest will either touch my forehead in the sign of the cross, or makes the
sign of the cross in front of my face, and I then say "Amen",  just like as
if I received the host.  In a Catholic church oftentimes a layperson will
offer the host in a different position than the priest, but the priest is
always present, and I move to his line, not the layperson.  I never partake
of the wine when it is offered,  I just shake my head no.  If I was forced
to be served communion by a layperson only, I would do the same thing.
 
For the past several times I have not received any weird looks from the
priest in the least.  In other Christian churches, I have even been offered
when chatting with the pastor after the service that if I plan on attending
regularly they will purchase the gluten free or low gluten host for me.
