Here is a summary of responses regarding maintaining a gluten free diet in China.
*Over half of the respondents stated that carrying a gluten free dining card was invaluable. Triumph dining cards were often mentioned.They can be purchased in 10 different languages. Clan Thompson travel card was also mentioned.Most recommended carrying multiple copies since they often didn't get them back. 
* having a personal guide to assist in asking questions was very helpful.
* It is harder to get gluten free meals in Beijing. They use more wheat in the north. In the south it seems like there are more food options available.
*Eating at 4 and 5 star restaurants was recommended. Korean bbq restaurants were great. Someone ate at restaurants listed on Lonely Planet Guide site very successfully.Some had difficulty eating at small restaurants since they didn't understand gluten free needs. 
*Stay away from anything brown.
*Rice and vegetables and lots of fruit are available. Be sure to wash and peel all fruits and vegetables. 
*One reported having no difficulty eating fruits and vegetables from roadside stands when peeled and washed.

Most said that they took gluten free foods, especially packages foods, such as crackers, snack bars, cereal. One took peanut butter in a plastic jar along with rice cakes. Gluten free soy sauce packets were also helpful. Taking food through customs didn't seem to be difficult but some suggested having a medical drs note of explanation might be helpful if there was a problem. 

*Do not count on using drug stores there since there most will not speak English.
