Beware of a new Trader Joe's product--Salmon Filets with Mojito Sauce, in the frozen section.
Silly me, I scanned the ingredients, and then did what I always do, go down to the bottom to check out the Allergy information. TJ has alwys been fairly good at getting this right, and they were early adopters of this kid of labeling.
The Allergy information : Soy and Seafood. Nothing about Wheat.
When I was ready to serve the meal, I checked again--and buried in the ingredients was--fermented wheat protein!! I don't know what this is. Is fermented wheat protein not worthy of the allergen information? Does fermenting render the gluten OK to ingest? I would doubt it, but I would love to hear otherwise.
I'm glad I checked, but I wanted to warn y'all to really read the ingredients lists carefully, and not necessarily rely on the allergen information at the bottom!
