Hi folks,
I got soooo many responses to my post I could barely read them all much less thank each and every person for their thoughtful responses. I wouldn't know where to begin to summarize much less how...unless of course this was the most interesting thing in my life and I wanted to write a book about GF living which is not my calling. Below is Nestle's GF tollhouse cookie recipe which they sent me:

Most people say that they substitute GF flour cup for cup for regular flour. Bette Hagman or Carol Fenster's blends seem to be the most popular. Mirelle has a wealth of info on her site. Brown rice flour seems to be better than white rice flour. Let cookies cool on tray after getting out of oven--always. Don't use Arrowroot for any baking of sweets--unanimously detested (sorry Arrowroot).
