After all my subtle hints, my daughter gave me the cookbook of my dreams....PERFECT CAKES BY NICK MALGIERI.  There are CHAMPTERS on flourless cakes of all kinds. Julia Child always recommended subsituting cornstarch for cake flour...cup for cup, and that opens up MORE recipes


Nick Malgieri runs the old Peter Kump cooking school, used to have a baking show on the FoodNetwork and is known as a master baker.

He is aware of our problems,,,,he wrote a gf corn biscotti for Lowell's AGAINST THE GRAIN.  great recipe
 
Malgieri's recipes work..his recipes read well and they are great. His books are great investments.
