In September, the small mountain town I live in, Estes Park, Colorado, we host the largest Highlands Festival in the US (or so they say!)  Of course most of the food they serve contains gluten so I have been working to convert the traditional Scottish recipes to gluten-free.  The festival always attracts guests so I have lots of opportunity to test out recipes.  Here is a traditional Scottish recipe for Cheese Scones made with Ruby Range Gluten-Free Basic Mix that I served to friends before the Tattoo last night.

Scottish Cheese Scones
1 1/2 cups Ruby Range Basic Mix (www.therubyrange.com<http://www.therubyrange.com/>)
1/4 stick of butter
1 large egg
2 - 2 1/2 Tablespoons milk
4 ounces grated cheddar cheese
1/2 teaspoon salt
1/2 teaspoon mustard powder
Pinch of cayenne pepper

Grease a cookie sheet.
Preheat oven to 425 degrees.

Mix flour, salt and cayenne together.  Cut in the butter and then mix in the cheese.  In a separate bowl beat egg, add the milk.  Add this mixture to the dry mixture to make a soft dough.  Pat out on a floured surface about 3/4 inch thick.  Cut in shapes and place on a prepared cookie sheet.  Bake until golden brown.
