I was wondering about these new Gluten-Free places popping up in DC/Balto.  
When I called a place down in DC, I asked about how often they clean their 
bakery so that cross-contamination doesn't occur. They didn't seem to think it 
was a problem!  I know that our local place up here in Balto (Tenzo Artisan) is 
always mentioning the problem and that they take great care to make sure 
their kitchen is wiped clean before they prepare their gluten-free options. 
Great little store down in Federal Hill (blackbottom cupcakes are my favorite).
