Hi Again—Coffee cake 2
1.Banana Bread
1/2 c. oil or melted butter
1/2 tsp. salt
1 c. sugar
1 1/2 tsp. baking soda
3 or 4 eggs, separated
1 tsp. baking powder
1 c. mashed banana (2-3)
1 tsp. Xanthan gum (opt.)
2 c. flour (mostly rice)
1/2 c. chop. walnuts
Melt marg. and mix with sugar and egg yolks. Add mashed banana. Sift dry
ingred. and add gradually. Stir in chopped nuts. Fold in stiff-beaten egg
whites. Bake 325' in greased loaf pan about 1 hr. and 15 min. Test with
toothpick. (I use 4 mini loaf pans, baked 42 min.)
2.Pumpkin Bread "The Gluten-Free Kitchen" by Roben Ryberg
3/4 cup canned pumpkin
1 egg
3/4 cup light brown sugar
1/4 cup oil
1/4 cup evaporated milk
1/2 cup potato starch
3/4 cup cornstarch
1/4 teaspoon baking soda
1 tablespoon baking powder
1/2 teaspoon salt
3/4 teaspoon xanthan gum
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
pinch (1/8 teaspoon) cloves (optional)
Directions
Preheat oven to 350 degrees. In large bowl, combine pumpkin, egg, light
brown sugar, oil, and milk. Mix well. Add remaining ingredients. Mix well
to remove any lumps in batter. Pour into greased loaf pan or bundt, bake
40-45 min., until toothpick tests clean. Allow to cool in pan at least 5
min. 3. go to epicurous.com and get your recipes there. Use cornstarch in place of
flour...works great...cup for cup 4. A good
all purpose mix is 3 c white rice (from oriental grocery is finest), 1 c.
cornstarch & 1 tsp. xanthan. Not terrible nutritious but it tastes good.

Betty Doubravsky's Coffee Cake
from Rose Sandrone, Milwaukee
1/4 c. salad oil (olive) (0.25)
1 beaten egg
1/2 c. milk (0.5)
1 1/2 c. g.f. flour (1.5)
1 1/2 tsp. xanthan gum (1.5)
3/4 c. sugar (0.75)
2 tsp. baking powder
Dash of salt
Combine oil, egg and milk. Sift the rest together. Add and mix
well. Pour into a 9x9x2" pan. Cover with spicy topping.*
Bake at 375° for 25 minutes.
*Spicy Topping: 1/2 c. brown sugar (0.5), 2 Tbs. g.f. flour 2 tsp. cinnamon, 2
Tbs. melted butter, 3/4 c. broken nuts (your choice) (0.75)
