I use gram flour (chickpea flour) a lot.  It is good for thickening,
and for batters.  My biggest discovery was that you can also make very
good pasta with it.  You just use gram flour and eggs in the same
proportions as for wheat pasta.  The dough isn't quite as supple as
with wheat flour, but it rolls reasonably well.
