A member posted this a little while ago:
"On America's Test Kitchen show today, they mentioned that PRE-SHREDDED =
CHEESE from the supermarket usually has a starch ..often wheat =
flour..added to prevent clumping...sort of like Coleman's Mustard =
Seeds...So, check with manufacturer of your fav cheeses to make sure =

First of all, if wheat would be added, the companies are obliged to disclose
it on the ingredient list, so, no need to call the companies.
Second, companies don't add wheat to the shredded cheese to prevent clumping.
