Dear List Mates,
Here is a new bread recipe - bagels. They are round. They are somewhat
chewy, but they aren't exactly as I remember a gluten bagel being. However,
after a number of unsuccessful recipes, this one works. It is inspired by
Sandra J. Leonard, but the ingredients are not identical to hers. Take a
look for yourself at: http://tinyurl.com/2wao33 . Look for the <New/Revised>
signal in red.
This version uses non-fat dry milk powder. Can it be made dairy-free?
Probably. Will it be the same? Probably not. There is a suggestion in the
recipe for dairy-free, but I haven't tried it yet. If you do, please let me
know. If you have a favorite bagel recipe that you think is better, please
post it so everyone can enjoy it. If you have questions, please let me know
and I will take a shot at answering them.
