I have never felt that Open Office and JAWS was a usable combination. I 
think you can mess around a bit with the word processor, especially if 
you have the Java Access Bridge installed, but it's always felt kind of 
clunky to me. I've heard that it's better with NVDA and Voice Over, but 
I can't say I've ever tried those combinations.

I've recently talked to someone who's using Jarte, a free word processor 
based on MS's Workpad, with JAWS and they seemed pretty happy. You can 
learn more about Jarte at http://www.jarte.com/.

I've recently started using Symphony 1.2 with JFW 10 and some fixes 
which I've heard will be included in the next update of JFW 10, and so 
far this seems to be a pretty nice combination. You can get Symphony 1.2 
from http://symphony.lotus.com/software/lotus/symphony/home.nsf/home. 
The registration process can seem a bit intimidating. sorry about that!
