I won a gluten free baking contest held by my local food co-op and
wanted to share the recipe for everyone to enjoy.

Chocolate Chip Ginger Bars
3/4 cup white sugar
3/4 cup brown sugar
1 cup butter or margarine
2 eggs
1 tsp. Vanilla
1 tsp cinnamon
1/2 tsp ground cardamom
1/4 tsp ground cloves
1 tsp. salt
1 tsp. baking soda
1 tsp. xanthan gum
1 1/2 cups soy flour
1/2 cup potato starch flour
1/2 cup finely chopped candied ginger
1 cup chocolate chips
Cream margarine and sugars. Add eggs and vanilla until blended. Add
salt, soda, xanthan gum, spices and flours. Mix well before stirring in
chocolate chips and ginger. Baking in 9 x 11-greased pan at 300 F until
set.
