As suggested on this listserv, I made the Namaste spice cake mix to make honey cake for Rosh Hashanah. It turned out excellent -- better than many gluten honey cakes! My gluten-eating friends had seconds.
The mix calls for 3/4 cup water, and I put in 1/2 cup water and 1/4 cup honey instead. I added one cup of shredded carrots, and it tasted great; though, I might not add the carrots next time for a more traditional honey cake. Also, I baked it for 30 min in a bundt pan.
Also, I made GF matza balls using a Leiber's kneidlach mix from Passover, and those turned out great. Again, the gluten-eating friends had seconds.
