Gluten Free Manicotti
Offered by Catharine Turro

Shells (makes approx 12) 

5 eggs 
1 1/4 cups rice flour 
1 1/4 cups water 
Pinch salt 

Blend ingredients together until smooth. Spread about 1/3 cup of batter
thinly onto ungreased non stick skillet. Cook about one minute then turn and
cook other side about 30 seconds. Repeat until all the batter is used. (The
outer shell is really a crepe.)

Filling

16-oz. container of ricotta cheese (Polly-O and Sargento brands are both
fine)
1 egg, lightly beaten
Chopped parsley (to taste)
Salt
Pepper
Pecorino Romano cheese (to taste)
Shredded mozzarella cheese
Pasta sauce of your choice

Combine first six ingredients and mix together. Place a generous dollop in
each crepe. Sprinkle shredded mozzarella cheese in each. Roll up.

Spread sauce over the bottom of a 9-x-13-inch Pyrex casserole. Set filled
crepes over sauce. Pour sauce over top. Sprinkle shredded mozzarella cheese
over sauce. Cover with lightly oiled foil. Bake in 350 degree oven for about
30 minutes – check inside filling with fork – should be firm, not runny.

Serves 6-8
