Here is a summary of responses regarding Instant Mashed Potatoes (I'm
looking for a replacement for Barbara's Bakery Instant Mashed Potatoes which
contained only potato flakes and citric acid.  They have been discontinued).
 The number in parenthesis after the product name is the count of emails I
received regarding that brand.  Below the brand name I included any details
that I found out about the product.

Idahoan (2)
INGREDIENTS: IDAHOŽ POTATOES, MONO AND DIGLYCERIDES, SODIUM ACID
PYROPHOSPHATE, SODIUM BISULFITE, CITRIC ACID, MIXED TOCOPHEROLS ADDED TO
PROTECT FRESHNESS.

Barry farms potato flakes by the pound - they can be ordered on Amazon (1)
I emailed Barry Farms to get more details but they have not responded.  Also
tried calling, but got an automated response and the line did not accept
messages.  From the picture it appears they have more ingredients than just
potato flakes. 

Betty Crocker's Potato Buds (2)
INGREDIENTS: POTATOES (dried), MONO AND DIGLYCERIDES (to improve texture),
FRESHNESS PROTECTED BY SODIUM BISULFATE and BHT.

Wal Mart brand (1)
I don't have a Walmart in my area and I couldn't find any details on line
regarding the ingredients/preservatives/nutrition facts.

From my own searching I found these to be the closest to Barbara's ingredients:

Description:Instant mashed potatoes
Ingredients: Whole potato flakes*.
*=dehydrated
They add an oxygen absorber (a plastic strip made from magnesium phosphate)
to the package to prevent rancidity but there are no chemical preservatives
added to the potato flakes.

Note: I also searched on amazon and found Bob's Red Mill Idaho Potato Flakes
Instant Mashed Potatoes.  Ingredients: Dried Idaho Russet Potatoes, Mono and
Diglycerides from Vegetable Oil (to Improve Texture), Citric Acid. However,
when I called Bob's Red for more info, they told me they have been discontinued.
