Lactic acid, is a carbohydrate substance. It probably does not contribute to
an allergic response, unless contaminated by a diary source.
In humans, we produce lactic acid when glucose is metabolized, and there is
an oxygen deficiency. Eg. when you run/exercise, and get sore muscles. The
soreness can often be attributed to lactic acid buildup.
