I have recently purchased the Zo and am happy with it. I had the original Zo
for many years and used it without problems so was happy to purchase the
same again. Every year or two I replaced the drive belt but not other
maintenance was needed. It was much to contaminated to use for gf baking.
I have made Bob's Red Mill mixes and find I had to reduce the liquid by about
1/3 cup. If the bread sinks in the middle then you have used to much liquid.
It does make a larger loaf and many recipes are designed for smaller
machines. I have doubled a recipe (not the yeast) and used a bit less than
doubled the liquid. I haven't experimented more than that.
I programed the following settings: preheat - 15 min, knead - 20, rise - 1 hr 5
min, bake - 1 hr 10 min and it seems to work well.
