I went to our local kosher deli last week to pick up some non-gebrockts
(grain-free) Passover foods and discovered a product new to me: Dr.
Praeger's Gluten Free Fish Sticks. The coating is made of potatoes, but it
bakes up nice and crispy just like regular fish sticks used to (and these
taste good!). Dr. Praeger's has a website listing this product as well as
two other gluten-free items, Gluten Free Fish Fillets and Gluten Free
Fishies (see http://www.drpraegers.com/products/category.aspx?SID=1
<http://www.drpraegers.com/products/category.aspx?SID=1&Category_ID=13>
&Category_ID=13 for more details, including lists of ingredients).
The package says that these are produced in a facility which also
manufactures wheat-containing products. I have not contacted them about the
steps they take against cross-contamination (I am personally just trusting
them), but those who are concerned may wish to contact Dr. Praeger's
Sensible Foods directly.
For those of you in the Sacramento, California, USA area, I bought these at
Bob's Butcher Block and Deli in Carmichael. The proprietor tells me that he
carries these fish sticks year-round, i.e., not just during Passover. I
plan to be a regular on these!
BTW, Ian's Natural Foods also makes gluten-free fish sticks, but those
contain corn, which is also a no-no for me. Ian's gluten-free foods are
easier to find (at least in our area), and if I remember correctly others on
this list have recommended them. This is Ian's webpage:

I know one can make fish sticks from scratch, too, but I admit, it's nice to
have tasty fish sticks I don't need to pull out a fryer for! I hope that
others who try these may like them, too.
With best wishes,
Kirsten
