2 1/2 cups Pamela's Brown rice Pankcake bake mix
2+ tsp cinnamon
1/2 cup honey
4 eggs
1 tbsp vanilla
Mix together and add a 1/3 cup oil (safflower is good) 1/3 cup
applesauce, Beat for 4 minutes on medium. Add 4-5 mashed bananas and 1 cup
pecan or walnuts pieces (optional).
Fill greased muffin tin. Bake at 375 for 35 minutes.
