Coconut oil cannot contain cholesterol because it is not from an animal.
It is however a saturated fat in its fresh state (without cooking or
heating).
Saturated fats are very unhealthy for the heart and will increase
cholesterol levels, specifically the artery clogging LDL type.
Canola oil and ALL vegetable oils will be converted to trans fats (NOT
saturated fats) when heated to smoke point or boiling. However, trans fats
are also very harmful to the heart.
Walnut, Canola, olive, and soybean oils are very healthy oils when used in
moderation in cooking, baking or salad dressings.
There is no need to avoid these fats even when following a low fat diet.
Walnut oil is the healthiest of them.
